Amsterdam has much to offer in that respect. Below I share a few of my favourite places, each with its own character and suited to a different kind of moment. All of them are also lovely to visit with a companion.
Kaagman & Kortekaas
When I feel like dining somewhere elegant without too much formality, I often choose Kaagman and Kortekaas. The kitchen blends Dutch and French influences and uses only local ingredients. It is an ideal place for a lunch that slowly becomes dinner, or for a first meeting where you want to take your time without it feeling too formal.
Mr. Sam
One restaurant that always manages to surprise me is Mr. Sam. The moment you walk in, it feels familiar and relaxed. The cuisine is Asian with a modern touch, subtle and well balanced. The setting is intimate, with attention to detail in both design and sound, which allows not only the conversation but also your own sense of calm to come forward. It is a place where time passes quietly and easily, and where you feel no need to rush.
Ciel Bleu
And if you are looking for an evening where every element is perfectly in place, then Ciel Bleu is the place to be. For those who want the full experience of a Michelin-starred restaurant with views over the city, flawless service and a refined kitchen where every detail is considered, this is a special choice. The pace is slow, the atmosphere quiet and focused, and the evening naturally takes on a rhythm that asks nothing of you except to be present. Not for everyday, and exactly for that reason, unforgettable.
